Finding a healthier bread option when you or your child is on a special diet can be very challenging. Many of the gluten-free breads are filled with unhealthy ingredients and additives that can be detrimental to your health. You might have decided to just give up on finding a good-tasting gluten-free bread and decided to try to make bread at home. This recipe for gluten-free, paleo bread is the perfect alternative. It is vegan, sugar-free, and dairy free so it fits into a variety of diets.
Preheat the oven to 375 degrees F (190 degrees C).
Place the flaxseed in a grinder or food processor and process until it becomes fine flour.
In a large bowl, whisk together the arrowroot flour, flaxseed meal, baking soda, and salt. Add club soda until combined (the dough will be thick).
Shape the dough into a mini loaf style. With wet hands, shape each piece into a roundish form and space it at least 2 inches apart on a prepared baking sheet.
Now cut three slashes into the top of each mini loaf with a sharp knife. These will allow air to flow through and help them rise more quickly!
Bake for 45-55 minutes, your mini loaf should be browned and opened up. Make sure you don't under cook this bread or the inside will be doughy. It should not be doughy on the inside.
