Homemade Vanilla Ice Cream

Ingredients
 
 

  • 1 can coconut cream 14 oz
  • 2 ½ cup oat milk
  • pinch salt
  • 5 egg yolks
  • ¾ cup maple syrup could have used a little less
  • 4-5 Cookies (Optional)

Instructions
 

  • Place all ingredients in a blender and allow to mix thoroughly
  • Place mixture into boiler and bring to a low simmer. Do not overcook this. Rember it has egg yolk in it so you want to stir and allow to thicken.
  • Once thickened, remove from heat and allow to cool completely.
  • Once completely cool, place in a covered glass dish or mason jar and keep in the fridge for several hours. I prep the day before I plan to make ice cream so I don't have to wait for the cooling process.
  • Follow the instructions on whatever ice cream machine you are using.
  • Before ice cream is done, add in the cookies
  • After ice cream is complete, you can transfer to a dish and put in the freezer if you prefer or eat it as is.
  • Serve with your favorite toppings.
