I have used this bread recipe to create sandwich-style bread by using a sandwich cutter.
I found it to work out just as good as regular sandwich bread when it is done that way.

Ingredients in this gluten free bread
For those who suffer from gluten intolerance or Celiac disease, finding alternatives to traditional bread that contain gluten can be a never-ending search.
Luckily, the market for gluten-free bread has exploded in recent years, offering a variety of options.
But have you ever considered what ingredients go into gluten-free bread?
Typically made from a mixture of grains such as rice, sorghum, and millet, these bread also use alternative flours like almond, flaxseed, or coconut.
Xanthan gum or psyllium husk is often added as a binding agent to mimic the texture of traditional bread.
For this bread, there are only 5 ingredients and one optional, meaning the list is short and sweet!
Flaxseed Meal, Arrowroot Flour, Carbonated Mineral Water, baking soda, salt, and a little honey [optional] – that’s it!
In the picture above you will see I have 2 different types of flaxseed. One is golden brown flaxseed and the other is dark brown flaxseed.
I personally enjoy the taste of the golden brown flaxseed but you can use either one in this recipe. I have found that dark flaxseed has a stronger flavor than golden.
This is just my personal preference but either tastes great.
How to make gluten free bread
Making this gluten-free bread is pretty simple and easy to make.
All you need is a bowl, mixing spoon, flaxseed meal, carbonated water, and an optional ingredient- raw honey.
There is an optional step you can take to make the flaxseed meal extra fine and that is using a food processor to make it extra fine.
This step is optional and does not change the taste of the bread.
First, mix the flaxseed meal with the carbonated water in a bowl until everything is blended together.
Then add your honey and blend until it’s all mixed together.
With these step-by-step instructions, you’ll have fresh bread in no time.
Gluten Free Paleo Bread
Ingredients
- 2 Cups flaxseed meal (I prefer golden flaxseed)
- ¼ Cup arrowroot flour
- ¼ Tsp Himalaya sea salt
- ¼ Tsp baking soda
- 1½ Cups of club soda
- 1-2 Tbsp (Honey) – optional
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Place the flaxseed in a grinder or food processor and process until it becomes fine flour.
- In a large bowl, whisk together the arrowroot flour, flaxseed meal, baking soda, and salt. Add club soda until combined (the dough will be thick).
- Shape the dough into a mini loaf style. With wet hands, shape each piece into a roundish form and space it at least 2 inches apart on a prepared baking sheet.
- Now cut three slashes into the top of each mini loaf with a sharp knife. These will allow air to flow through and help them rise more quickly!
- Bake for 45-55 minutes, your mini loaf should be browned and opened up. Make sure you don't under cook this bread or the inside will be doughy. It should not be doughy on the inside.
- Let cool for a few minutes before serving. Enjoy!

Tips and Tricks to Perfectly Bake Gluten-Free Bread

I have made this bread with both and either will rise. I used approximately 1 1/2 TBSP of baking powder in place of the baking soda and it worked great.
You can experiment with making this bread into whatever shape you would like. You can also make thicker bread by doubling the recipe and adding more dough to whatever shape of bread you are making.
